Flowers. Anyway they shouldn't have disappeared during that fight but maybe later we'll see that.

They are ice petals, and are part of his final release. Some people speculate that they disappear because he is not yet fully able to control his final release, due to his young age.

As he uses hyorinmaru in final release it uses up the water in the air around him, as that moisture gets used up the petals break so you could say they are an indicator of his limit with bankai. If he was fighting near a waterfall i guess the petals would remain for a while at least till the waterfall is drained anyway.

Enough with random speculations.
Those "things" are just his ice petals. Their function is unknown. That's all.

if im wrong, correct me plz...Yea. Are we talking about those flowers that are above him? If so.. I think they're sort of like an indicator of how long he can use his Bankai. It's something like that but there's a mild explanation in the manga that I can't remember.

^ mild explanation...
the Arrancar just says:
Due to his young age his bankai has a shorter time limit.
as Undying said it's ridiculous to speculate, but that's basically wat this forum does for bleach =P
so it IMO it also may be leading up to an even more powerful attack, or his "true form" before it dissipates.
just a thought to consider :)

Well actually the manga does say but the anime probably won't reach there until episode 120 something. Just in case you want to know this is the reason why it actually disappears and it's not really a speculation from me but actually a fact said in the manga. The reason why the ice petals disappears is because that stands for his time limit until it actually disappears. It can't last long because it is still a incomplete bankai. All bankai will sooner or later disappear due to time limit or when ur growing weak but for time limit a complete bankai won't disappear that quickly. It can actually last like 1 day or more if it stays always active but a incomplete bankai will only be able to last around 30 - 60 min. So yea that's why it disappears.

like byakukya's bankai for sure a 1000 would make a fully bankai.
its how he use it only ;)
hitsugaya nids more training to be like byakukya's. and own
The anime rendition of the disappearing ice petals is screwed anyway. 4 at a time? And besides, purple ice stars look awful.

the petal are for as long as he can hold his bankai for once the petal are gone so is his bankai yes due to his age but simply for now until he can't control it longer, so it just goes away when all the petals are gone [his bankai that is]
read further under spoiler for more info...:)
Three "flowers" of ice are also created behind Hitsugaya with four petals each. The twelve ice petals melt away as Hitsugaya attacks. During a battle with Hitsugaya, the arrancar Shawlong speculates that the final release will end when all twelve petals disappear, claiming that Hitsugaya's final release is "incomplete" due to his young age. However, the ability of an arrancar to fully understand a shinigami's weapon is questionable at best, so this theory is only provisional. Also, Hitsugaya was operating under a power limit at the time, which could have affected Shawlong's perception of his strength. During his battle with the arrancar Luppi, Hitsugaya mentions that as long as there is water in his immediate surrounding area, his final release form is able to regenerate itself indefinitely. The petals aren't visible at this time, casting doubt on Shawlong's theory.

The arrancar that says it's because of his age doesn't acknowledge that shinigami operate under a power limit when they come to the real world.

Actually those petals were visible during the time he attacked his foe in the manga. You can see them in a panel right before he attacks.
So let's just face it, this thread outlived itself.
The answer to the question is simple:
Hitsugaya's bankai has four petals floating behind them. We have no idea what they do. That's it.
